It gives me great pleasure to announce Shire Meadery! Shire Meadery was borne out of a wish to both create high quality meads and popularise this remarkable but underappreciated drink. Created by fermenting honey, mead is often made to be sweet and strong, but at Shire Meadery we focus on creating lighter offerings that give subtle flavours, more sociable drinks with wide appeal, particularly for those that find other tipples unpalatable.
Another focus of Shire Meadery is to showcase outstanding quality and versatility in our creations. Honey is made from flower nectar, the flavour of that honey reflects the flowers the bees foraged on in that particular location at that particular time, as such, a mead can be truly unique: from place to place, season to season and year to year.
I started making mead in the summer of 2017 purely as a hobby, but quickly realised I had something special that I wanted to share. The journey from bioscientist to meadmaker has been quite a learning experience already, but things are coming together nicely and I’m quite excited about what’s in store for the future!
